Deviled Eggs

Ingredients:

  • 6 eggs, hard-boiled, peeled, cut in half
  • 1/4c mayo
  • 1tsp white vinegar
  • 1tsp yellow mustard
  • 1/8tsp salt & pepper
  • paprika for sprinkling
  • Directions:

  • Collect egg yolks in bowl & mix with all ingredients (except paprika) until smooth.
  • Place mixture into the egg whites & sprinkle with paprika.
  • *Not: To make the filling look nice, put into a ziploc bag, snip off corner and pipe into each egg white. Then sprinkle with paprika.

  • Cheese Tortellini with Pesto

    Ingredients:

  • 1 pkg frozen or fresh cheese tortellini
  • Prepared pesto (~2-3Tbsp)
  • Parmesan cheese
  • Directions:

  • Prepare tortellini as directed on package. Drain, reserving about 1/2 cup of pasta water.
  • Add pesto to pan, and thin with pasta water, adding 1/4 cup at a time.
  • Add in pasta and stir. Top with parm.

    Meatloaf

    Ingredients

  • 1lb ground beef or ground beef/pork mix
  • ~1/2c ketchup
  • ~1c oats
  • 1-2 eggs
  • Italian seasoning, onion powder, garlic powder, salt & pepper—all to taste
  • Parmesan cheese (mom prefers shaved)
  • Directions

  • Preheat oven to 375
  • Line a baking sheet with foil.
  • Mix all ingredients together in a large bowl.
  • Form into a loaf shape and place on lined pan.
  • Top with a mixture of 1/4cup ketchup, 1/8c mustard, 1t balsamic vinegar.
  • Bake ~45min (this will depend on how thick the loaf is formed)

  • Roasted Rosemary Potatoes

    Ingredients:

  • New or red potatoes
  • Olive oil
  • Rosemary
  • Salt & pepper
  • Directions:

  • Preheat oven to 375.
  • Cut potatos in halves or quarters to get consistent sizes and place on baking sheet.
  • Drizzle with olive oil, chopped rosemary, salt, and pepper.
  • Bake ~20 minutes, flip potatoes, bake another 10-15 minutes.
  • The potatoes will probably stick to the pan. That's okay. Use a spatula or pancake turner to scrape them up and flip. That's where the crunchy goodness comes from!


    Roasted Asparagus

    Ingredients:

  • Asparagus bundle
  • Olive oil
  • Salt & pepper
  • Balsamic vinegar
  • Directions:

  • Preheat oven to 375-400.
  • Break off tough ends of asparagus and discard.
  • Place on baking sheet
  • Sprinkle with olive oil, balsalmic vinegar, salt and pepper.
  • Roast for about 15 minutes. Check often.

  • Soutwestern Egg Rolls

    Originally from here. My version, double portions

    Ingredients:

  • 2 red bell peppers
  • 2 yellow onions
  • 2 cups frozen corn
  • 2 15oz cans black beans
  • 1½ cups frozen spinach
  • 8 green onions
  • 2tsp cumin
  • 2tsp chili powder
  • 4tsp garlic powder
  • 4tsp onion powder
  • 1 cup cheddar or pepper jack (Optional)
  • Avocado oil
  • Salt
  • 20 soft taco-sized tortillas

  • Directions:

  • Preheat oven to 400℉
  • Chop the Red bell peppers, yellow onions, and green onions.
  • Heat a drizzle of oil in a large skillet over medium-high heat.
  • Add red bell pepper, yellow onion, and a big pinch of salt. Cook until edges turn brown, about 10 minutes.
  • Add corn, beans, spinach, green onion, and spices. Grate cheese into a separate bowl if using a block. Cook for 10 more minutes, stirring regularly.
  • Remove from heat and add cheese, stirring until cheese is integrated.
  • Put one tortilla in the oven for about 30 seconds, until they're warm and pliable. Add a line of filling and roll like a burrito. Repeat on remaining tortillas, placing seam side down on a parchment-lined pan.
  • Brush with avocado oil and bake for about 20 minutes, until bottoms are brown. Flip and cook for 5-10 more minutes, until both sides are even.

    Banana Bread

    Ingredients:

  • 3-4 overripe bananas
  • 1c sugar
  • 1 stick butter, melted & cooled
  • 2 eggs
  • 1tsp vanilla or almond extract
  • 2c/9oz flour (my mom uses oat flour & unbleached white or wheat)
  • 1tsp baking soda
  • 1tsp salt
  • 2tsp pumpkin pie spice or 1tsp each of cinnamon and nutmeg
  • 1c chopped walnuts (optional)
  • Directions:

  • Preheat oven to 350℉. Melt butter & set aside to cool
  • Place bananas and sugar in large mixing bowl & mash with potato masher until smoothish.
  • Combine remaining wet ingredients with banana mixture
  • Combine dry ingredients. Mix with wet until just combined. Fold in nuts if using.
  • Place in 9" loaf pan or 12 muffin tin sprayed with cooking spray and bake 50min to an hour. Let cool in pan 15min, or muffins 30min

  • Peach Cobbler

    Goop

  • 2lbs fresh peaches
  • 1/2c sugar
  • 2Tbsp flour
  • 1Tbsp lemon juice
  • 1/2tsp vanilla extract
  • 1/4tsp almond extract
  • 1/2tsp ground cinnamon
  • 1/4tsp salt
  • 2Tbsp butter (cut into tiny pieces)
  • Topping

  • 1c flour
  • 1c sugar
  • 1tsp baking powder
  • 1/4tsp salt
  • 4Tbsp softened butter
  • 2 eggs
  • Blanch peaches & place in bowl with goop ingredients. Dot with 2Tbsp butter.
  • Prepare topping. Beat with topping until smooth. Spread evenly over peaches.
  • Bake 50 minutes.

  • Sauces & Spices

    Zaxby's Fry Salt Knockoff

  • 3 parts garlic powder
  • 1 part paprika
  • 1 part onion powder
  • 1 part oregano

  • Zaxby's Sauce Knockoff

  • 1/2c Mayo (I use Duke's)
  • 1/4c Ketchup
  • 1/2tsp Pepper
  • 1/2tsp Garlic Powder
  • 1/2tsp Worcestershire Sauce
