Meatloaf
Ingredients
1lb ground beef or ground beef/pork mix
~1/2c ketchup
~1c oats
1-2 eggs
Italian seasoning, onion powder, garlic powder, salt & pepper—all to taste
Parmesan cheese (mom prefers shaved)
Directions
Preheat oven to 375
Line a baking sheet with foil.
Mix all ingredients together in a large bowl.
Form into a loaf shape and place on lined pan.
Top with a mixture of 1/4cup ketchup, 1/8c mustard, 1t balsamic vinegar.
Bake ~45min (this will depend on how thick the loaf is formed)
Roasted Rosemary Potatoes
Ingredients:
New or red potatoes
Olive oil
Rosemary
Salt & pepper
Directions:
Preheat oven to 375.
Cut potatos in halves or quarters to get consistent sizes and place on baking sheet.
Drizzle with olive oil, chopped rosemary, salt, and pepper.
Bake ~20 minutes, flip potatoes, bake another 10-15 minutes.
The potatoes will probably stick to the pan. That's okay. Use a spatula or pancake turner to scrape them up and flip. That's where the crunchy goodness comes from!
Roasted Asparagus
Ingredients:
Asparagus bundle
Olive oil
Salt & pepper
Balsamic vinegar
Directions:
Preheat oven to 375-400.
Break off tough ends of asparagus and discard.
Place on baking sheet
Sprinkle with olive oil, balsalmic vinegar, salt and pepper.
Roast for about 15 minutes. Check often.
Soutwestern Egg Rolls

Ingredients:
2 red bell peppers
2 yellow onions
2 cups frozen corn
2 15oz cans black beans
1½ cups frozen spinach
8 green onions
2tsp cumin
2tsp chili powder
4tsp garlic powder
4tsp onion powder
1 cup cheddar or pepper jack (Optional)
Avocado oil
Salt
20 soft taco-sized tortillas
Directions:
Preheat oven to 400℉
Chop the Red bell peppers, yellow onions, and green onions.
Heat a drizzle of oil in a large skillet over medium-high heat.
Add red bell pepper, yellow onion, and a big pinch of salt. Cook until edges turn brown, about 10 minutes.
Add corn, beans, spinach, green onion, and spices. Grate cheese into a separate bowl if using a block. Cook for 10 more minutes, stirring regularly.
Remove from heat and add cheese, stirring until cheese is integrated.
Put one tortilla in the oven for about 30 seconds, until they're warm and pliable. Add a line of filling and roll like a burrito. Repeat on remaining tortillas, placing seam side down on a parchment-lined pan.
Brush with avocado oil and bake for about 20 minutes, until bottoms are brown. Flip and cook for 5-10 more minutes, until both sides are even.
